Ingredients:

200g salted cod fillets
2 potatoes, peeled and diced into cubes
1 onion, finely chopped
2 cloves garlic, minced
1 bay leaf
1/2 teaspoon smoked paprika powder
2 tablespoons olive oil
200ml single cream
Salt and pepper to taste

Cooking Instructions:

Soak the salted cod in cold water for at least 8 hours or overnight. Drain the water and set aside.
Heat the olive oil in a large skillet over medium heat. Add the onion and garlic and cook until softened.
Add the potatoes and bay leaf to the skillet and cook for 5 minutes until lightly browned.
Add the smoked paprika powder to the skillet and stir to combine all ingredients together.
Add the drained salted cod fillets to the skillet and pour over the single cream. Bring to a simmer then reduce heat to low and cover with a lid for 15 minutes or until potatoes are cooked through.
Remove from heat and season with salt and pepper to taste before serving hot with crusty bread or boiled rice if desired.
