Ingredients:

100g salted cod
1 potato, peeled and diced into small cubes
2 tablespoons olive oil
1/2 teaspoon garlic powder
1/4 teaspoon paprika
1/4 teaspoon black pepper
2 tablespoons chopped parsley leaves
1/2 cup cornbread crumbs

Cooking Instructions:

Preheat oven to 350°F (175°C).
Place the salted cod in a bowl and cover with cold water. Let it soak for 10 minutes. Drain and pat dry with paper towels.
In a large bowl, combine the potato cubes with the olive oil, garlic powder, paprika and black pepper. Mix until all the potatoes are evenly coated with the spices.
Spread the potatoes on a baking sheet lined with parchment paper and bake for 20 minutes or until golden brown and crispy.
In a separate bowl, mix together the parsley leaves and cornbread crumbs until combined.
Once the potatoes are done baking, remove from oven and top with the salted cod pieces followed by the cornbread crumb mixture. Bake for an additional 10 minutes or until golden brown on top.
Serve hot and enjoy!
