Portuguese Arroz de Marisco

Ingredients:

2 tablespoons olive oil
1 small onion, finely chopped
1 garlic clove, minced
2 tablespoons tomato paste
1/2 teaspoon smoked paprika
1/4 teaspoon saffron threads, crumbled
150g short
grain white rice
250ml fish stock or vegetable stock
100g mixed seafood (e.g. prawns, mussels and squid)

Cooking Instructions:

Heat the olive oil in a large saucepan over medium heat. Add the onion and garlic and cook for 3-4 minutes until softened.
Add the tomato paste, smoked paprika and saffron threads and cook for a further minute until fragrant.
Add the rice to the pan and stir to coat in the oil mixture. Pour in the stock and bring to a boil then reduce heat to low and simmer for 15 minutes until the rice is cooked through.
Add the seafood to the pan and cook for a further 5 minutes until cooked through. Serve immediately with lemon wedges if desired.
