Portuguese Arroz de Cabidela

Ingredients:

150g chicken thigh fillet, diced
1 tablespoon olive oil
1 small onion, finely chopped
2 cloves garlic, minced
1 teaspoon paprika
½ teaspoon ground cumin
½ teaspoon ground coriander seed
½ teaspoon dried oregano leaves
¼ teaspoon ground black pepper
¼ teaspoon salt
250ml chicken stock or water
100g long grain white rice

Cooking Instructions:

Heat the olive oil in a large saucepan over medium heat. Add the diced chicken and cook for 5 minutes until lightly browned.
Add the onion and garlic to the pan and cook for a further 3 minutes until softened.
Add the paprika, cumin, coriander seed, oregano leaves, black pepper and salt to the pan and stir to combine. Cook for 1 minute until fragrant.
Pour in the chicken stock or water and bring to a boil. Reduce heat to low and add the rice to the pan. Simmer for 25-30 minutes until all liquid has been absorbed and rice is cooked through. Serve hot with your favorite accompaniments such as steamed vegetables or salad greens.
