Portuguese Açorda for One

Ingredients:

2 slices of stale bread
2 cloves of garlic, minced
1 tablespoon olive oil
1 egg
½ cup cooked white beans
¼ cup chopped parsley
¼ teaspoon smoked paprika
Salt and pepper to taste

Cooking Instructions:

Preheat the oven to 350°F (175°C).
Place the bread slices on a baking sheet and bake for 10 minutes until lightly toasted.
Heat the olive oil in a skillet over medium heat. Add the garlic and cook for 1 minute until fragrant.
Add the white beans and cook for 3 minutes until heated through.
Add the parsley, smoked paprika, salt, and pepper to the skillet and stir to combine.
Crack an egg into the center of the skillet and cook for 3 minutes until cooked through but still runny in the center.
Place one slice of toast on a plate and top with half of the bean mixture from the skillet. Top with another slice of toast and remaining bean mixture from the skillet. Serve immediately while hot!
