Ingredients:

2 slices of stale bread, cubed
2 cloves garlic, minced
1 tablespoon olive oil
1/2 cup chicken broth or vegetable broth
1/4 cup white wine or dry sherry
1/4 teaspoon saffron threads, crushed into a powder
1/4 teaspoon smoked paprika (optional)
2 tablespoons chopped parsley leaves
2 tablespoons chopped cilantro leaves
2 tablespoons chopped chives
Salt and pepper to taste

Cooking Instructions:

Heat the olive oil in a medium saucepan over medium heat. Add the garlic and cook until fragrant, about 1 minute.
Add the cubed bread and stir to coat with the garlic and oil. Cook for 3-4 minutes until lightly browned.
Pour in the chicken broth or vegetable broth, white wine or dry sherry, saffron powder, smoked paprika (if using), parsley leaves, cilantro leaves and chives. Stir to combine all ingredients together. Simmer for 5 minutes until the liquid has reduced slightly and thickened up a bit.
Season with salt and pepper to taste and serve hot! Enjoy!
