Ingredients:

1 orange, peeled and sliced into rounds
½ fennel bulb, thinly sliced
2 tablespoons olive oil
1 tablespoon lemon juice
1 teaspoon honey or agave nectar
¼ teaspoon sea salt
¼ teaspoon freshly ground black pepper
2 tablespoons chopped fresh parsley or cilantro leaves

Cooking Instructions:

In a medium bowl, combine the orange slices and fennel slices.
In a small bowl, whisk together the olive oil, lemon juice, honey or agave nectar, sea salt and black pepper.
Pour the dressing over the orange and fennel mixture and toss to combine.
Sprinkle with chopped parsley or cilantro leaves.
Serve immediately or chill in the refrigerator for up to one hour before serving.
