Ingredients:

1 cup Basmati Rice
1/2 cup Mixed Vegetables (Carrots, Peas, Beans)
1/4 cup Onion (chopped)
1/4 cup Tomato (chopped)
2 tablespoons Ghee or Oil
1 teaspoon Cumin Seeds
2 cloves Garlic (minced)
1 teaspoon Ginger (grated)
1 teaspoon Turmeric Powder
2 teaspoons Coriander Powder
1 teaspoon Red Chili Powder
Salt to taste
2 tablespoons Cilantro Leaves (chopped)
1 Egg (beaten)

Cooking Instructions:

Soak the basmati rice in water for 10 minutes. Drain the water and set aside.
Heat ghee or oil in a pan over medium heat. Add cumin seeds and let them sizzle for a few seconds.
Add garlic and ginger and sauté for a minute until fragrant.
Add chopped onion and sauté until it turns golden brown in color.
Add chopped tomatoes and cook until they become soft and mushy.
Add mixed vegetables, turmeric powder, coriander powder, red chili powder, salt to taste and mix well to combine all the ingredients together. Cook for 5 minutes until the vegetables are cooked through but still retain their crunchiness.
Now add the soaked basmati rice into the pan along with 2 cups of water or vegetable stock if desired for extra flavor). Stir everything together gently so that all the ingredients are evenly distributed throughout the pan without breaking the rice grains too much. Cover the pan with a lid and let it cook on low heat for 15 minutes or until all the liquid has been absorbed by the rice grains completely .
Once done turn off the heat and fluff up the biryani using a fork or spoon gently so that all ingredients are evenly distributed throughout without breaking too many rice grains . 9 . In a separate pan heat some oil over medium heat . Once hot add beaten egg into it . Fry it on both sides until golden brown in color . Cut into small pieces . 10 . Finally add fried egg pieces , chopped cilantro leaves into biryani , mix everything together gently . Serve hot ! Enjoy !
