Ingredients:

1/2 cup basmati rice
1/2 cup diced carrots
1/2 cup diced bell peppers (any color)
1/4 cup frozen peas
1 tablespoon olive oil
1 teaspoon cumin seeds
1 teaspoon garam masala powder
1/4 teaspoon turmeric powder
Salt to taste

Cooking Instructions:

Begin by rinsing the basmati rice in a sieve until the water runs clear. Then add the rice to a pot with 1 cup of water and bring it to a boil over medium heat. Once boiling, reduce the heat to low and cover the pot with a lid. Simmer for 15 minutes or until all the water has been absorbed. Remove from heat and fluff with a fork before setting aside.
Heat olive oil in a large skillet over medium heat. Add cumin seeds and let them sizzle for 30 seconds before adding carrots, bell peppers, peas, garam masala powder, turmeric powder, and salt to taste. Stir everything together and cook for 5 minutes or until vegetables are tender but still crisp.
Add cooked basmati rice to the skillet with vegetables and mix everything together until combined. Cook for an additional 5 minutes or until heated through before removing from heat. Serve hot!
