Ingredients:

1/2 cup basmati rice
1/4 cup yogurt
1/2 teaspoon garam masala powder
1/4 teaspoon turmeric powder
1/4 teaspoon red chili powder
2 tablespoons oil or butter (or a combination of both)
2 cloves garlic, minced
1 small onion, chopped
2 tablespoons tomato paste
1/2 cup cooked chicken, shredded or cubed

Cooking Instructions:

In a medium saucepan over medium heat, add the basmati rice and enough water to cover it by about an inch. Bring to a boil and then reduce the heat to low. Cover and cook for 15 minutes or until the rice is cooked through. Remove from heat and set aside.
In a small bowl, mix together the yogurt, garam masala powder, turmeric powder and red chili powder until combined. Set aside.
Heat the oil or butter in a large skillet over medium heat. Add the garlic and onion and cook for 3-4 minutes until softened. Add the tomato paste and cook for another minute or two until fragrant.
Add the yogurt mixture to the skillet along with the cooked chicken and stir everything together until combined. Cook for 5-7 minutes until everything is heated through and fragrant.
To assemble the biryani, layer half of the cooked rice in an oven-safe dish followed by half of the chicken mixture on top of it. Repeat with another layer of rice followed by another layer of chicken mixture on top of it again before covering with foil or a lid if available. Bake in preheated oven at 350°F for 15 minutes or until heated through completely before serving hot with your favorite accompaniments such as raita or chutney!
