Ingredients:

1 cup basmati rice
2 tablespoons vegetable oil
1 teaspoon cumin seeds
1 teaspoon mustard seeds
1/2 teaspoon turmeric powder
1/2 teaspoon garam masala powder
2 cloves garlic, minced
1 small onion, chopped
2 green chilies, chopped
2 tablespoons fresh cilantro leaves, chopped
Salt to taste
Water as needed

Cooking Instructions:

Rinse the basmati rice in cold water until the water runs clear. Soak the rice in cold water for 10 minutes. Drain and set aside.
Heat the oil in a medium saucepan over medium heat. Add the cumin and mustard seeds and cook until they start to sizzle.
Add the turmeric powder and garam masala powder and stir for a few seconds until fragrant.
Add the garlic, onion, green chilies and cilantro leaves and cook for a few minutes until softened.
Add the drained rice to the pan and stir to combine with the spices and vegetables. Season with salt to taste.
Pour enough water into the pan so that it covers the rice by about an inch or two (about 2 cups). Bring to a boil then reduce heat to low, cover with a lid and simmer for 15-20 minutes or until all of the liquid has been absorbed by the rice and it is cooked through. 7
