Ingredients:

2 tablespoons vegetable oil
1 teaspoon minced garlic
1 teaspoon minced shallot
1/2 teaspoon ground turmeric powder
2 tablespoons fish sauce
2 tablespoons sugar
1/2 cup chicken broth or water
2 ounces dried rice noodles
1/4 cup cooked shrimp or pork
1/4 cup sliced shallots
2 tablespoons chopped peanuts
2 tablespoons chopped cilantro leaves
1 tablespoon lime juice
Salt and pepper to taste

Cooking Instructions:

Heat the oil in a medium-sized pot over medium heat. Add the garlic and shallot and cook until fragrant, about 30 seconds. Add the turmeric powder and stir for another 30 seconds.
Add the fish sauce and sugar and stir until combined. Pour in the chicken broth or water and bring to a boil.
Add the noodles and cook for 5 minutes or until tender. Add the shrimp or pork, shallots, peanuts, cilantro leaves, lime juice, salt and pepper to taste. Stir to combine all ingredients together.
Cook for another 5 minutes or until all ingredients are heated through. Serve hot in a bowl with extra lime wedges on the side if desired.
