Ingredients:

1 cup basmati rice
1/2 cup frozen peas
1/4 cup diced carrots
1/4 cup diced potatoes
1/4 cup diced onions
2 tablespoons vegetable oil or ghee (clarified butter)
1 teaspoon cumin seeds
1 teaspoon garam masala
1 teaspoon turmeric powder
Salt to taste

Cooking Instructions:

Soak the basmati rice in water for 10 minutes. Drain and set aside.
Heat the oil or ghee in a large pot over medium heat. Add the cumin seeds and let them sizzle for a few seconds. Then add the onions and sauté until they are lightly browned.
Add the carrots, potatoes, peas, garam masala, turmeric powder and salt to taste. Sauté for a few minutes until all the vegetables are lightly cooked but still crunchy.
Add the drained basmati rice to the pot and mix everything together until it is well combined. Add 1 ½ cups of water and bring it to a boil over high heat. Once it starts boiling, reduce the heat to low and cover with a lid. Let it cook for 15-20 minutes or until all the water has been absorbed by the rice and vegetables are cooked through.
Turn off the heat and let it sit covered for another 5-10 minutes before serving hot with raita or yogurt on the side! Enjoy!
