Ingredients:

1 cup cooked chickpeas (chana)
1 tablespoon vegetable oil
1 teaspoon cumin seeds
1 teaspoon coriander powder
½ teaspoon turmeric powder
½ teaspoon garam masala powder
1 onion, finely chopped
2 cloves garlic, minced
2 green chillies, finely chopped
2 tomatoes, finely chopped
Salt to taste
¼ cup water For the Paratha:
1 cup whole wheat flour (atta)
2 tablespoons vegetable oil plus extra for cooking the parathas
¼ teaspoon salt
¼ cup water or as needed

Cooking Instructions:

Heat the oil in a pan over medium heat. Add the cumin seeds and let them sizzle for a few seconds.
Add the onions and garlic and sauté until they are lightly browned.
Add the chillies and tomatoes and cook for a few minutes until they are softened.
Add the cooked chickpeas along with all the spices (coriander powder, turmeric powder and garam masala). Stir to combine everything together.
Add salt to taste and ¼ cup of water. Cover the pan with a lid and let it simmer for 10 minutes or until all the liquid has been absorbed by the chickpeas. Keep stirring occasionally to prevent it from sticking to the bottom of the pan.
To make the parathas, mix together all of the ingredients in a bowl until it forms a soft dough ball. Knead it for 5 minutes until it is smooth and pliable. Divide into 4 equal portions and roll each portion into a circle about ½ cm thick using some extra flour if needed to prevent sticking to your work surface or rolling pin.
Heat a non-stick pan over medium heat and add some oil or butter if desired before adding one paratha at a time to cook on both sides until golden brown spots appear on each side (about 2-3 minutes per side). Repeat this process with remaining parathas as well before serving them hot with your chana masala dish!
