Ingredients:
1 cup cooked chickpeas (chana)
1 teaspoon oil
1 teaspoon cumin seeds
1 onion, finely chopped
2 cloves garlic, minced
1 teaspoon ginger paste or freshly grated ginger root
1 teaspoon ground coriander powder
½ teaspoon ground cumin powder
¼ teaspoon turmeric powder
¼ teaspoon red chili powder or to taste
2 tablespoons tomato puree or crushed tomatoes
Salt to taste
2 tablespoons chopped fresh cilantro leaves for garnish
For the Paratha:
½ cup whole wheat flour (atta)
2 tablespoons oil
¼ teaspoon salt
Water as needed for kneading the dough
Oil for cooking the parathas
Cooking Instructions:
Heat oil in a pan over medium heat. Add cumin seeds and let them sizzle for a few seconds.
Add onion and sauté until it turns golden brown. Add garlic and ginger paste and sauté for another minute.
Add all the spices – coriander powder, cumin powder, turmeric powder and red chili powder – and mix well. Sauté for another minute until fragrant.
Add tomato puree or crushed tomatoes and mix well. Cook until the mixture starts to thicken slightly.
Add cooked chickpeas (chana) and mix well with the masala mixture. Cook for 5-7 minutes until everything is combined together nicely and the masala is thickened slightly more than before adding the chickpeas (chana). Adjust salt as per taste preference at this stage if needed.
To make parathas, take wheat flour in a bowl along with salt and oil in it and mix everything together using your fingertips until it resembles breadcrumbs texture like consistency is achieved by mixing everything together nicely without forming any lumps in it . Now add water little by little while kneading into a soft dough . Cover it with damp cloth or kitchen towel for 10 minutes . After 10 minutes knead again lightly . Divide into equal portions . Take one portion of dough on rolling board , roll into thin circle using rolling pin . Heat tawa on medium flame , place rolled paratha on tawa , cook both sides till golden brown spots appear on both sides . Apply some oil while cooking both sides of paratha if desired . Serve hot with chana masala .
Garnish chana masala with fresh cilantro leaves before serving with hot parathas!
