Ingredients:

2 large carrots, peeled and cut into 1
inch pieces
2 tablespoons olive oil
1 teaspoon fresh thyme leaves
1 teaspoon fresh oregano leaves
2 cloves garlic, minced
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
Juice of 1/2 lemon

Cooking Instructions:

Preheat oven to 400°F (200°C).
Place carrots in a large bowl and add olive oil, thyme leaves, oregano leaves, garlic, salt and pepper. Toss to combine.
Spread carrots in an even layer on a baking sheet lined with parchment paper or aluminum foil.
Roast for 20-25 minutes or until carrots are tender and lightly browned.
Remove from oven and squeeze lemon juice over the top before serving.
