Ingredients:

1/2 red bell pepper, sliced into strips
1/2 yellow bell pepper, sliced into strips
1/2 zucchini, sliced into strips
1/2 eggplant, sliced into strips
2 tablespoons olive oil
1 teaspoon cumin powder
1 teaspoon coriander powder
1 teaspoon paprika powder
Salt and pepper to taste

Cooking Instructions:

Preheat the grill to medium-high heat.
Place the bell peppers, zucchini, eggplant slices on a baking sheet lined with parchment paper. Drizzle the vegetables with olive oil and sprinkle with cumin powder, coriander powder, paprika powder and salt and pepper to taste. Toss to coat evenly.
Place the vegetables on the preheated grill and cook for about 8-10 minutes or until they are tender and lightly charred on both sides.
