Ingredients:

1 eggplant, sliced into 1 cm thick rounds
2 tablespoons olive oil
2 cloves garlic, minced
1 teaspoon ground cumin
½ teaspoon ground coriander
½ teaspoon paprika
Salt and pepper to taste For the yogurt sauce:
½ cup plain Greek yogurt
2 tablespoons chopped fresh parsley
1 tablespoon lemon juice
Salt and pepper to taste

Cooking Instructions:

Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
Place eggplant slices on the baking sheet and brush both sides with olive oil. Sprinkle garlic, cumin, coriander, paprika, salt and pepper over the eggplant slices.
Bake in preheated oven for 15-20 minutes or until golden brown and tender.
Meanwhile, prepare the yogurt sauce by combining all ingredients in a small bowl and stirring until combined.
Serve eggplant slices with yogurt sauce on the side. Enjoy!
