Ingredients:

2 cups romaine lettuce, chopped
1/2 cup cucumber, diced
1/2 cup tomatoes, diced
1/4 cup red onion, diced
2 tablespoons parsley leaves, chopped
2 tablespoons mint leaves, chopped
2 tablespoons olive oil
2 tablespoons lemon juice
1/4 teaspoon ground cumin
Salt and pepper to taste
2 pita breads cut into small cubes

Cooking Instructions:

Preheat oven to 350°F (175°C). Place the pita cubes on a baking sheet and bake for 10 minutes or until golden brown. Set aside.
In a large bowl combine the lettuce, cucumber, tomatoes, red onion, parsley and mint leaves.
In a small bowl whisk together the olive oil, lemon juice and cumin. Season with salt and pepper to taste.
Pour the dressing over the salad ingredients and toss to combine.
Add the pita cubes to the salad and toss again until everything is evenly coated with dressing. Serve immediately or chill in refrigerator for up to an hour before serving.
