Ingredients:

2 chicken breasts
2 tablespoons of jerk seasoning
2 tablespoons of olive oil
1 red onion, diced
1 red pepper, diced
1 yellow pepper, diced
1/2 cup of cherry tomatoes, halved
1/2 cup of black beans
1/2 cup of corn
2 tablespoons of lime juice
2 tablespoons of chopped cilantro
Salt and pepper to taste

Cooking Instructions:

Preheat oven to 375°F.
Rub chicken breasts with jerk seasoning and olive oil.
Place chicken breasts on a baking sheet and bake for 20 minutes.
Remove chicken from oven and let cool.
In a large bowl, combine red onion, red pepper, yellow pepper, cherry tomatoes, black beans, corn, lime juice, and cilantro.
Once chicken has cooled, dice into cubes and add to the bowl.
