Ingredients:

1 cup cooked white rice
2 cups chicken broth or dashi stock
1/2 cup diced carrots
1/2 cup diced onions
1/2 cup diced mushrooms
2 tablespoons soy sauce or tamari sauce
2 tablespoons mirin (sweet cooking wine)
4 ounces cooked chicken or shrimp (optional)

Cooking Instructions:

In a medium pot over medium heat, add the chicken broth or dashi stock and bring to a boil.
Add the carrots, onions, mushrooms, soy sauce or tamari sauce and mirin to the pot and stir to combine. Simmer for 5 minutes until the vegetables are tender.
Add the cooked white rice to the pot and stir to combine. Simmer for an additional 5 minutes until the rice is heated through.
Add the cooked chicken or shrimp (optional) to the pot and stir to combine. Simmer for an additional 5 minutes until everything is heated through.
Serve hot with additional soy sauce or tamari sauce if desired. Enjoy!
