Ingredients:

120g soba noodles
1 tablespoon sesame oil
1 teaspoon soy sauce
1 teaspoon mirin (sweet rice wine)
2 tablespoons sake (rice wine)
2 tablespoons sugar
2 tablespoons white miso paste
1/2 cup dashi stock (or vegetable stock)
1/4 cup sliced shiitake mushrooms
1/4 cup sliced carrots
1/4 cup sliced green onions

Cooking Instructions:

Bring a pot of water to a boil and add the soba noodles. Cook for 8-10 minutes until al dente. Drain and rinse with cold water to stop the cooking process. Set aside.
In a small bowl, mix together the sesame oil, soy sauce, mirin, sake, sugar and miso paste until combined. Set aside.
Heat a large skillet over medium heat and add the dashi stock. Bring to a simmer and add the mushrooms, carrots and green onions. Cook for 5 minutes until vegetables are tender.
Add the soba noodles to the skillet and pour in the sauce mixture. Stir everything together until combined and cook for an additional 5 minutes until heated through. Serve hot in individual bowls with extra soy sauce if desired.
