Ingredients:

1 cup of white rice
2 tablespoons of soy sauce
1 tablespoon of mirin (sweet cooking sake)
1 teaspoon of sugar
2 tablespoons of vegetable oil
2 cloves of garlic, minced
1/4 cup of diced onion
1/4 cup of diced carrots
1/4 cup of diced bell peppers

Cooking Instructions:

Cook the white rice according to package instructions. Set aside when done.
In a small bowl, mix together the soy sauce, mirin and sugar until combined. Set aside.
Heat the vegetable oil in a large skillet over medium heat. Add the garlic and onion and cook for 2 minutes until fragrant and softened.
Add the carrots and bell peppers to the skillet and cook for an additional 3 minutes until vegetables are tender-crisp.
Pour in the soy sauce mixture and stir to combine with vegetables. Cook for an additional 2 minutes until sauce is thickened slightly.
Add cooked rice to skillet and stir to combine with vegetables and sauce mixture until everything is evenly coated in sauce mixture. Cook for an additional 5 minutes until everything is heated through and flavors have blended together nicely.
Serve hot or cold as desired! Enjoy!
