Ingredients:

2 bell peppers (halved and seeded)
1 tablespoon olive oil
1 small onion (diced)
1 clove garlic (minced)
250g ground beef
2 tablespoons tomato paste
½ teaspoon ground cumin
½ teaspoon paprika powder
¼ teaspoon ground coriander
¼ teaspoon turmeric powder
¼ teaspoon black pepper
¼ teaspoon salt
150g cooked white rice

Cooking Instructions:

Preheat oven to 200°C. Line a baking sheet with parchment paper. Place the bell pepper halves on the baking sheet and bake for 15 minutes. Remove from oven and set aside.
Heat the olive oil in a large skillet over medium heat. Add the onion and garlic and cook until softened, about 5 minutes. Add the ground beef and cook until browned, about 8 minutes.
Add the tomato paste, cumin, paprika powder, coriander powder, turmeric powder, black pepper and salt to the skillet and stir to combine. Cook for an additional 3 minutes until fragrant.
Add the cooked white rice to the skillet and stir to combine with the beef mixture. Cook for an additional 3 minutes until heated through.
Fill each bell pepper half with equal amounts of the beef mixture and place back on the baking sheet lined with parchment paper. Bake for an additional 20 minutes until peppers are tender but not mushy.
