Ingredients:

2 tablespoons olive oil
1/2 onion, diced
1 garlic clove, minced
1/2 teaspoon ground cumin
1/4 teaspoon paprika
1/4 teaspoon chili powder (optional)
2 tablespoons tomato paste
1/2 cup diced tomatoes
2 large eggs
2 tablespoons crumbled feta cheese

Cooking Instructions:

Heat the olive oil in a medium skillet over medium heat. Add the onion and garlic and cook until softened, about 5 minutes. Add the cumin, paprika and chili powder (if using) and cook for another minute.
Add the tomato paste and diced tomatoes and stir to combine. Simmer for 10 minutes until the sauce has thickened slightly.
Make two wells in the sauce and crack an egg into each well. Cover the skillet with a lid and cook for 8-10 minutes until the eggs are cooked to your liking. Sprinkle with feta cheese before serving.
