Ingredients:

1 sweet potato, peeled and cut into cubes
2 cloves garlic, minced
1 tablespoon olive oil
1 teaspoon dried oregano
1 teaspoon dried thyme
Salt and pepper to taste

Cooking Instructions:

Preheat oven to 375°F (190°C).
Place the sweet potato cubes in a bowl and add the garlic, olive oil, oregano, thyme, salt and pepper. Toss to combine.
Spread the sweet potatoes onto a baking sheet lined with parchment paper or aluminum foil.
Bake for 25-30 minutes or until golden brown and tender when pierced with a fork.
