Ingredients:

2 tablespoons olive oil
1 red bell pepper, cut into strips
1 yellow bell pepper, cut into strips
1 zucchini, sliced into rounds
1 eggplant, sliced into rounds
2 cloves garlic, minced
2 tablespoons fresh parsley, chopped
Salt and pepper to taste

Cooking Instructions:

Preheat a grill or grill pan over medium-high heat.
In a large bowl combine the olive oil, bell peppers, zucchini, eggplant garlic and parsley. Season with salt and pepper to taste. Toss to combine.
Place the vegetables on the preheated grill or grill pan and cook for 8-10 minutes until vegetables are tender and lightly charred on both sides.
