Ingredients:

2 large tomatoes, diced
1 red bell pepper, diced
1 green bell pepper, diced
2 cloves garlic, minced
2 tablespoons olive oil
1 teaspoon paprika
Salt and pepper to taste

Cooking Instructions:

Preheat oven to 375°F (190°C).
In a large bowl combine the tomatoes, bell peppers and garlic.
Drizzle with olive oil and season with paprika, salt and pepper.
Spread the mixture onto a baking sheet lined with parchment paper.
Bake in preheated oven for 25 minutes or until vegetables are tender and lightly browned.
