Ingredients:

1 large eggplant, sliced into 1/2 inch thick slices
2 tablespoons olive oil
2 cloves garlic, minced
1 teaspoon dried oregano
1 teaspoon dried basil
1/2 teaspoon ground cumin
Salt and pepper to taste
2 tomatoes, sliced into wedges

Cooking Instructions:

Preheat a grill or grill pan to medium heat.

Add the tomato wedges to the grill or pan and cook for 3 minutes per side until lightly charred and tender.
