Ingredients:

1 cup Israeli couscous
2 tablespoons olive oil
1/2 cup diced red bell pepper
1/2 cup diced yellow bell pepper
1/2 cup diced cucumber
1/4 cup chopped fresh parsley leaves
2 tablespoons freshly squeezed lemon juice
2 tablespoons chopped fresh mint leaves
Salt and freshly ground black pepper to taste

Cooking Instructions:

Bring a pot of salted water to a boil over high heat. Add the couscous and cook for 8-10 minutes until al dente. Drain and set aside.
Heat the olive oil in a large skillet over medium heat. Add the bell peppers, cucumber, parsley, lemon juice, mint leaves, salt and pepper and cook for 5 minutes until the vegetables are tender.
Add the cooked couscous to the skillet and stir to combine all ingredients together. Cook for an additional 3-5 minutes until heated through. Serve warm or cold as desired.
