Ingredients:

2 tablespoons olive oil
1/2 teaspoon ground cumin
1/2 teaspoon garlic powder
1/4 teaspoon paprika
1/4 teaspoon ground coriander
Salt and pepper to taste
4 ounces boneless, skinless chicken breast, cut into thin strips
2 slices whole wheat bread or pita bread
2 tablespoons hummus
2 tablespoons tahini sauce
1/4 cup diced tomatoes
1/4 cup diced cucumber

Cooking Instructions:

In a small bowl, mix together the olive oil, cumin, garlic powder, paprika, coriander, salt and pepper. Add the chicken strips and stir to coat evenly. Set aside for 10 minutes to marinate.
Heat a large skillet over medium-high heat and add the marinated chicken strips. Cook for 5-7 minutes until cooked through and lightly browned on both sides. Remove from heat and set aside.
Toast the bread or pita in a toaster or on a skillet over medium heat until lightly browned on both sides. Spread each slice with hummus and tahini sauce.
Top each slice of bread with half of the cooked chicken strips, tomatoes and cucumber slices. Serve immediately while warm.
