Ingredients:

1 cup basmati rice
1/2 cup green lentils
1/2 cup diced carrots
1/2 cup diced potatoes
1/4 cup peas
2 tablespoons vegetable oil or ghee
2 cloves garlic, minced
1 teaspoon cumin seeds
1 teaspoon coriander powder
1 teaspoon garam masala powder
Salt to taste

Cooking Instructions:

Rinse the basmati rice and lentils separately in cold water until the water runs clear. Soak the rice for 15 minutes and set aside.
Heat the oil or ghee in a large pot over medium heat. Add the cumin seeds and garlic and sauté for a few seconds until fragrant.
Add the carrots, potatoes, peas, coriander powder, garam masala powder and salt to taste. Sauté for 5 minutes until vegetables are lightly cooked but still crunchy.
Add the soaked rice and lentils to the pot along with 2 cups of water. Bring to a boil then reduce heat to low and cover with a lid. Simmer for 20 minutes or until all liquid is absorbed and rice is cooked through.
Remove from heat and fluff with a fork before serving hot!
