Indian Tofu Tikka Masala

This vegan Indian Tofu Tikka Masala is an easy one-pan meal that’s full of flavor! Marinated tofu cubes are baked in the oven then simmered in a creamy tomato sauce with spices like cumin, coriander powder, garam masala powder, turmeric powder and chili powder (optional). Serve over cooked basmati rice or quinoa with fresh cilantro leaves as garnish if desired! Enjoy!

Ingredients:

200g firm tofu, cubed
2 tablespoons vegetable oil
1 onion, finely chopped
2 cloves garlic, minced
1 teaspoon ginger paste or freshly grated ginger root
1 teaspoon ground cumin
1 teaspoon ground coriander powder
½ teaspoon garam masala powder
½ teaspoon turmeric powder
¼ teaspoon chili powder (optional)
2 tablespoons tomato paste
200ml coconut milk or cream

Cooking Instructions:

Preheat oven to 200°C/400°F. Place the cubed tofu on a baking sheet lined with parchment paper and bake for 15 minutes until golden brown. Set aside.
Heat the oil in a large skillet over medium heat. Add the onion and cook for 3-4 minutes until softened and lightly browned. Add the garlic and ginger paste and cook for another minute until fragrant.
Add the cumin, coriander powder, garam masala powder, turmeric powder and chili powder (if using). Cook for another minute until fragrant.
Add the tomato paste and stir to combine everything together. Cook for another minute before adding the coconut milk or cream and stirring to combine everything together again. Bring to a simmer then reduce heat to low-medium heat and let simmer for 5-10 minutes until sauce has thickened slightly.
Add the baked tofu cubes into the sauce and stir to combine everything together again before removing from heat. Serve over cooked basmati rice or quinoa with fresh cilantro leaves as garnish if desired! Enjoy!
