Ingredients:

1 cup red lentils (masoor dal)
2 tablespoons ghee or oil
1 teaspoon cumin seeds
1 onion, finely chopped
2 cloves garlic, minced
1 teaspoon ginger paste or grated ginger root
2 tomatoes, chopped
1 teaspoon garam masala
½ teaspoon turmeric powder
Salt to taste

Cooking Instructions:

Rinse the lentils in cold water until the water runs clear. Soak them in warm water for 10 minutes. Drain and set aside.
Heat the ghee or oil in a large saucepan over medium heat. Add the cumin seeds and fry for a few seconds until fragrant. Add the onion and fry until golden brown. Add the garlic and ginger paste and fry for another minute.
Add the tomatoes and cook until they are soft and mushy. Add the garam masala, turmeric powder, salt to taste and mix well. Cook for another minute before adding the drained lentils to the pan. Stir to combine everything together before adding enough water to cover the lentils by about an inch or two (about 2 cups). Bring to a boil then reduce heat to low-medium and simmer for 20-25 minutes until the lentils are cooked through but still have some texture left in them (they should not be mushy). If needed add more water during cooking time if it gets too dry or thickens too much before it’s done cooking.
Serve hot with rice or naan bread! Enjoy!
