Ingredients:

2 tablespoons vegetable oil
1 teaspoon cumin seeds
1 onion, chopped
2 cloves garlic, minced
1 teaspoon ginger paste
1 green chili pepper, chopped (optional)
2 tomatoes, chopped
1 teaspoon garam masala powder
½ teaspoon turmeric powder
½ teaspoon red chili powder (optional)
2 cups mixed vegetables (such as potatoes, carrots, bell peppers), cut into cubes
Salt to taste

Cooking Instructions:

Heat the oil in a large kadai or wok over medium heat. Add the cumin seeds and let them sizzle for a few seconds. Add the onion and sauté until it turns golden brown. Add the garlic and ginger paste and sauté for another minute. Add the green chili pepper if using.
Add the tomatoes and cook until they are soft and mushy. Then add the garam masala powder, turmeric powder, red chili powder if using, and salt to taste. Stir everything together until combined.
Add the mixed vegetables to the kadai and stir everything together until combined. Cover with a lid and cook for 10 minutes or until the vegetables are tender but still have some bite to them.
Serve hot with steamed rice or naan bread on the side. Enjoy!
