Ingredients:

1 tablespoon vegetable oil
1 small onion, finely chopped
2 cloves garlic, minced
1 teaspoon ginger paste
1 teaspoon ground coriander
½ teaspoon ground cumin
¼ teaspoon turmeric powder
¼ teaspoon chili powder (optional)
1 cup diced tomatoes
2 tablespoons tomato paste
½ cup coconut milk
1 boneless chicken breast, cut into cubes

Cooking Instructions:

Heat the oil in a large skillet over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
Add the ginger paste, coriander, cumin, turmeric powder and chili powder (if using). Cook for 1 minute more.
Add the tomatoes and tomato paste and cook for another 2 minutes.
Pour in the coconut milk and bring to a simmer. Add the chicken cubes and cook until cooked through, about 10 minutes.
Serve hot with rice or naan bread. Enjoy!
