Ingredients:

2 tablespoons vegetable oil
1 onion, diced
2 cloves garlic, minced
1 teaspoon ground ginger
1 teaspoon ground cumin
1 teaspoon ground coriander
1/2 teaspoon turmeric powder
2 tablespoons tomato paste
1/2 cup coconut milk or heavy cream
2 cups cooked chicken, shredded or cubed
2 cups mixed vegetables (such as carrots, peas, bell peppers)
Salt and pepper to taste
2 tablespoons butter
Chopped fresh cilantro for garnish (optional)

Cooking Instructions:

Heat the oil in a large skillet over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
Add the ginger, cumin, coriander and turmeric powder and cook for another minute.
Add the tomato paste and stir to combine. Cook for another minute or two until fragrant.
Pour in the coconut milk or heavy cream and stir to combine. Bring to a simmer and cook for 5 minutes until slightly thickened.
Add the chicken and vegetables to the skillet and season with salt and pepper to taste. Simmer for 10-15 minutes until the vegetables are tender and the sauce is thickened.
Stir in the butter until melted then remove from heat. Serve over rice or naan bread with chopped fresh cilantro if desired.
