Ingredients:

2 tablespoons vegetable oil
1/2 onion, diced
1 garlic clove, minced
1 teaspoon ground ginger
1 teaspoon garam masala powder
1/2 teaspoon ground cumin
1/4 teaspoon ground turmeric
2 tablespoons tomato paste
2 tablespoons butter or ghee (clarified butter)
200g boneless chicken thighs or breasts, cut into cubes
200ml coconut milk or cream
Salt and pepper to taste
200g cooked basmati rice
Fresh coriander leaves for garnish (optional)

Cooking Instructions:

Heat the oil in a large skillet over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
Add the ginger, garam masala powder, cumin and turmeric and cook for another minute.
Add the tomato paste and butter or ghee and stir until combined.
Add the chicken cubes and cook until lightly browned on all sides, about 5 minutes.
Pour in the coconut milk or cream and bring to a simmer. Simmer for 10 minutes or until the chicken is cooked through. Season with salt and pepper to taste.
Serve over cooked basmati rice with fresh coriander leaves for garnish (optional). Enjoy!
