Ingredients:

1/2 cup Israeli couscous
1/2 cup cherry tomatoes, halved
1/2 cup zucchini, sliced
1/2 cup bell pepper, sliced
1/4 cup red onion, diced
2 tablespoons olive oil
2 tablespoons balsamic vinegar
1 teaspoon garlic powder
1 teaspoon dried oregano
Salt and pepper to taste

Cooking Instructions:

Preheat the grill to medium-high heat.
In a medium pot, bring 1 cup of water to a boil. Add the Israeli couscous and cook for 8-10 minutes, or until the couscous is tender. Drain and set aside.
