Ingredients:

200g shrimp, peeled and deveined
1 bunch asparagus, trimmed
1 red onion, cut into wedges
2 tablespoons olive oil
2 cloves garlic, minced
2 tablespoons lemon juice
1 teaspoon honey
Salt and pepper to taste

Cooking Instructions:

Preheat oven to 200°C.
Place asparagus and red onion on a baking sheet and drizzle with 1 tablespoon of olive oil. Roast for 10 minutes.
Heat remaining olive oil in a large skillet over medium-high heat. Add shrimp and cook for 3-4 minutes, or until shrimp is cooked through.
In a small bowl, whisk together garlic, lemon juice, honey, salt and pepper.
To assemble the salad, place roasted asparagus and red onion on a plate. Top with cooked shrimp and drizzle with lemon garlic dressing.
