Ingredients:

2 boneless skinless chicken breasts
2 tablespoons olive oil
1 teaspoon garlic powder
1 teaspoon Italian seasoning blend
Salt and pepper to taste
2 zucchinis, sliced into thin rounds
8 ounces mushrooms, sliced
2 tablespoons balsamic vinegar For the Balsamic Vinaigrette:
3 tablespoons olive oil
1 tablespoon balsamic vinegar

Cooking Instructions:

Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
In a small bowl, combine the olive oil, garlic powder, Italian seasoning blend, salt and pepper. Rub the mixture onto the chicken breasts. Place on the prepared baking sheet and bake for 25 minutes or until cooked through.
Meanwhile, place the zucchini slices on another baking sheet lined with parchment paper. Drizzle with 1 tablespoon of olive oil and season with salt and pepper to taste. Bake for 15 minutes or until lightly browned.
In a large skillet over medium heat, heat remaining tablespoon of olive oil. Add mushrooms and cook for 5 minutes or until softened.
To make the vinaigrette, whisk together 3 tablespoons of olive oil and 1 tablespoon of balsamic vinegar in a small bowl until combined.
To assemble the salad, place cooked chicken on top of a bed of lettuce or spinach leaves in a large bowl or plate if desired. Top with roasted zucchini slices and mushrooms then drizzle with balsamic vinaigrette before serving warm or cold as desired!
