Ingredients:

2 chicken breasts
2 tablespoons olive oil
1/2 teaspoon salt
1/2 teaspoon pepper
1/2 butternut squash, peeled and cubed
2 tablespoons olive oil

2 cups arugula
2 tablespoons olive oil
2 tablespoons white wine vinegar
1 teaspoon Dijon mustard

Cooking Instructions:
