Ingredients:

2 boneless skinless chicken breasts (200g)
2 tablespoons olive oil (30ml)
1 teaspoon garlic powder (5ml)
1 teaspoon paprika (5ml)
Salt and pepper to taste (2g each)
2 pears, cored and sliced into wedges (200g)
2 cups mixed greens (100g)
½ cup crumbled blue cheese (50g) For the dressing:
¼ cup olive oil (60ml)
2 tablespoons white wine vinegar (30ml)
1 tablespoon honey (15ml)

Cooking Instructions:

Preheat the grill to medium heat.
Rub the chicken breasts with olive oil, garlic powder, paprika, salt and pepper. Grill for 10 minutes on each side or until cooked through. Set aside to cool slightly before slicing into strips.
In a large bowl, combine the pear wedges, mixed greens and blue cheese crumbles. Toss to combine.
In a small bowl whisk together the olive oil, white wine vinegar and honey for the dressing. Pour over the salad and toss to combine.
Add the grilled chicken strips to the salad and toss again until everything is evenly coated in dressing. Serve immediately or chill in the refrigerator for up to 3 days before serving.
