Ingredients:

1 cup couscous
1/2 cup cherry tomatoes, halved
1/4 cup cucumber, diced
1/4 cup red onion, diced
1/4 cup feta cheese, crumbled
2 tablespoons olive oil
2 tablespoons lemon juice
1 teaspoon oregano
Salt and pepper to taste

Cooking Instructions:

Bring 1 cup of water to a boil in a medium saucepan.
Add the couscous and stir.
Reduce the heat to low and cover the pan.
Simmer for 10 minutes, or until the couscous is cooked.
Remove from heat and fluff with a fork.
In a large bowl, combine the cooked couscous, tomatoes, cucumber, red onion, feta cheese, olive oil, lemon juice, oregano, salt, and pepper.
Mix until all ingredients are evenly distributed.
