Ingredients:

75g self
raising flour
25g caster sugar
50g butter, diced
25g currants or sultanas
1/4 teaspoon ground cinnamon
1/4 teaspoon mixed spice
1 medium egg, beaten

Cooking Instructions:

Preheat the oven to 200°C/400°F/Gas Mark
Grease a baking tray with butter.
Sift the flour into a bowl and add the sugar, butter, currants or sultanas, cinnamon and mixed spice. Rub the ingredients together with your fingertips until it resembles breadcrumbs.
Add the beaten egg and mix together until it forms a dough.
Roll out the dough on a lightly floured surface to about 5mm thick and cut out circles using a 5cm cutter. Place on the greased baking tray and bake for 15 minutes until golden brown.
Serve warm with butter or jam if desired.
