Delicious Welsh Beef Casserole

This delicious Welsh Beef Casserole is an easy one pot meal that can be made in just one hour! It’s packed with flavor from lean beef mince cooked with onion, garlic, carrot, celery, thyme leaves, tomato paste and Worcestershire sauce before being simmered in beef stock until tender then thickened slightly with cornflour mixture for an extra creamy texture! Ingredients:

500g lean beef mince
1 onion, diced
2 cloves garlic, minced
1 carrot, diced
2 celery stalks, diced
1 teaspoon dried thyme leaves
2 tablespoons tomato paste
1 tablespoon Worcestershire sauce
500ml beef stock
2 tablespoons cornflour mixed with 2 tablespoons cold water

Cooking Instructions:

Heat a large saucepan over medium heat and add the beef mince. Cook until browned. Remove from the pan and set aside.
Add the onion, garlic, carrot and celery to the pan and cook for 5 minutes until softened. Add the thyme leaves and cook for another minute.
Return the beef mince to the pan along with the tomato paste and Worcestershire sauce. Stir to combine then pour in the beef stock. Bring to a simmer then reduce heat to low and cover with a lid. Simmer for 40 minutes or until the beef is tender.
Remove lid from pan then stir in cornflour mixture until thickened slightly. Simmer for another 5 minutes or until desired consistency is reached then remove from heat and serve hot with mashed potatoes or crusty bread rolls if desired.
