This delicious vegan Indian Dal Tadka is full of flavor and nutrition! Ingredients:

1 cup split yellow lentils (toor dal)
2 tablespoons vegetable oil
1 teaspoon cumin seeds
1 teaspoon mustard seeds
2 cloves garlic, minced
1 small onion, diced
2 green chilies, chopped
1 teaspoon turmeric powder
2 tablespoons tomato paste
Salt to taste

Cooking Instructions:

Rinse the lentils in cold water until the water runs clear. Soak for 10 minutes. Drain and set aside.
Heat the oil in a large saucepan over medium heat. Add the cumin and mustard seeds and cook until they start to sizzle. Add the garlic, onion, and green chilies and cook for 3-4 minutes until softened.
Add the turmeric powder and tomato paste and stir to combine. Cook for another minute or two until fragrant.
Add the lentils to the pan along with 3 cups of water and bring to a boil over high heat. Reduce heat to low and simmer for 15-20 minutes until lentils are tender but not mushy. Season with salt to taste.
Serve hot with steamed rice or chapati/roti/naan breads on the side! Enjoy!
