Ingredients:

2 boneless, skinless chicken breasts (200g)
2 tablespoons of olive oil (30ml)
1 teaspoon of ground ginger (5ml)
1 teaspoon of garlic powder (5ml)
1/2 teaspoon of salt (2.5ml)
1/4 teaspoon of black pepper (1.25ml)
2 cups of mixed greens (100g)
1/2 cup of cherry tomatoes, halved (75g)
1/4 cup of red onion, diced (50g)
2 tablespoons of balsamic vinegar (30ml)
2 tablespoons of honey (30ml)

Cooking Instructions:

Preheat oven to 375°F/190°C.
In a small bowl, mix together olive oil, ground ginger, garlic powder, salt and pepper.
Place chicken breasts in a baking dish and pour the olive oil mixture over them. Bake for 15 minutes or until cooked through.
In a large bowl combine mixed greens, cherry tomatoes and red onion.
In a small bowl whisk together balsamic vinegar and honey to make the dressing for the salad. Pour over the salad and toss to combine.
Slice the cooked chicken breasts into strips and add to the salad. Toss again to combine everything together evenly.
Serve immediately or chill in the refrigerator until ready to serve!
