Ingredients:

500g pork belly, cut into 2cm cubes
2 tablespoons vegetable oil
1 tablespoon garlic, minced
1 teaspoon ginger, minced
2 tablespoons soy sauce
1 tablespoon Shaoxing wine or dry sherry
1 teaspoon sugar
2 tablespoons chili bean paste or chili sauce (optional)

Cooking Instructions:

Heat the oil in a wok or large skillet over medium-high heat. Add the pork cubes and stir-fry for 3 minutes until lightly browned.
Add the garlic and ginger and stir-fry for another minute.
Add the soy sauce, Shaoxing wine or dry sherry, sugar and chili bean paste or chili sauce (if using). Stir-fry for another minute until everything is well combined.
Reduce the heat to low and cover the wok or skillet with a lid. Simmer for 15 minutes until the pork is cooked through and tender.
Uncover the wok or skillet and increase the heat to medium-high again. Stir-fry for another 5 minutes until all of the liquid has evaporated and the pork is lightly browned again. Serve hot with steamed rice or noodles.
