Ingredients:

2 tablespoons vegetable oil
1/2 cup diced onion
1/2 cup diced celery
1/2 cup diced carrots
2 cloves garlic, minced
2 cups chicken broth or vegetable broth
1/4 teaspoon ground ginger
1/4 teaspoon ground white pepper
2 tablespoons soy sauce or tamari sauce
1/2 cup cooked rice (preferably jasmine or basmati)
2 tablespoons cornstarch mixed with 2 tablespoons cold water
2 tablespoons chopped green onions for garnish
Salt to taste

Cooking Instructions:

Heat the oil in a large pot over medium heat. Add the onion, celery, carrots and garlic and cook until softened, about 5 minutes.
Add the broth, ginger and white pepper and bring to a boil. Reduce heat to low and simmer for 10 minutes.
Add the soy sauce or tamari sauce and cooked rice and simmer for another 5 minutes.
Slowly add the cornstarch mixture while stirring constantly until soup thickens slightly. Simmer for another 5 minutes until heated through. Taste and adjust seasoning with salt if needed.
Serve hot garnished with green onions if desired. Enjoy!
